Açai Smoothie with Coconut Milk

I hosted a Ladies Brunch with my friends Marion and Katharina yesterday and it was lots of fun to cook and bake for 20 guests. We plan to do more of those events in near future, I’ll keep you posted!  One of the recipes I prepared was this Açai Smoothie. I like to use Açai powder and not the frozen puree just because it’s easier to store and easier to use. Açai can taste quite bitter, start with less of the powder and increase the amount once you like it! And as I get so many questions how to stick those strawberries to the glass: cut the strawberries quite thinly, use a cookie cutter for the heart shape and press them against the glass. They will stick by themselves – no magic involved. I like to pour the smoothie over the back of a spoon, which ‘protects’ the strawberries a bit and I promise, they will stick there 100%.

First you need to decide whether you prefer a smoothie bowl or a smoothie to sip. For a smoothie bowl you need a thicker consistency so best to use a frozen and sliced banana (slice before you freeze it!). If you like to have a more “drink” texture, use a normal banana.

For one smoothie (roughly):

  • 1 banana – either frozen or non-frozen
  • 1/2 cup frozen blackberries
  • 3/4 cup coconut milk or any other plant based milk
  • 1 tablespoon Açai powder
  • optional: 1 teaspoon sweetener (maple syrup, date syrup…)

Mix all in a blender and serve with fresh fruits, cacao nibs, shredded coconut, goji berries….whatever your cupboard offers!
