Sweet Foccacia

I was quite shocked when I saw the last time I’ve posted here was August last year. Much has happened since then and it felt like my blog needed a little revamp. Still get used to the new format and first will catch up with some recipes I’ve only published on Instagram so far. The first one is this incredible delicious Sweet Foccacia I’ve created in collaboration with Bertolli olive oil. Foccacia was always one of my favorite things to eat and I saw the first sweet version of it in my local Italian shop and had to try it myself. Give it a go!

Recipe
1.5 cups warm water
3.5 cups spelt flour
3 tbsp olive oil
1 tsp sea salt
1 tbsp dry yeast

1/2 cup mixed berries
1 tbsp sugar

a bit icing sugar if needed

Combine all ingredients and beat at high speed for at least 60 sec. Drizzle some (more) olive oil in a pan and transfer the dough into the pan. Cover and let it rest for 60 minutes. Preheat the oven to 375F and poke the dough with your index finger. Add some more oil and the fruits, sprinkle with sugar and bake for 30 minutes. Add some icing sugar before serving.
