For me, autumn has arrived as soon as I can find plums in the supermarket. I never pay plums enough attention although they are so versatile. I made this recipe for breakfast but I think it is perfect as a dessert too. You can use any granola you like, I used homemade granola with lots of cinnamon which is so quick and easy to make! Plum Parfait
Ingredients
- 5 tbsp granola
- 150g soy yoghurt (or any other plant based one)
- 5 plums (keep one for decoration)
- 2 tbsp maple syrup
- a few blueberries
- fresh mint
Method
Slice 4 plums and place them in a saucepan. Add the maple syrup and a bit of water and cook for 5-10 minutes on medium heat until you have a plum compote. Let it cool down for a bit.
Place the granola in a jar, add the soy yoghurt and top with the plum compote. Slice the plum and decorate your jar with it plus some berries and fresh mint.
Cinnamon granola
In a big bowl, mix 1.5 cups oats with 1/2 cup mixed nuts and seeds (e.g. almonds, pumpkin seeds..) and 2 tbsp maple syrup and 2 tbsp melted coconut oil. Stir well and add 1 tbsp cinnamon. Place onto a baking sheet and bake for 20 minutes in the preheated oven at 175°. Let it cool down completely before breaking it into parts.
