Blue Buckwheat Banana Bowl

This is a variation of my raw buckwheat porridge I posted on Instagram a couple of weeks ago. As you might know I love colors and there is nothing better than a colorful breakfast which is an instant mood lifter for me! The blue in those bowls is created by butterfly pea powder. This is a powder mainly produced in Thailand and even a small amount is enough to color your smoothies, waffles, porridges..whatever you could think of! Interestingly it changes it’s color to purple once mixed with lemon juice but I might do another blog post soon writing about this. First the easy peasy recipe for this bowls!

Soak 100g buckwheat groats over night in 200ml water. Next morning, drain the water from the buckwheat and rinse well. Place buckwheat in a food blender and add 1/2 ripe banana, 50ml almond milk, 1/2 teaspoon butterfly pea powder and a few blackberries if you like! Top with fresh fruits and popped quinoa!
