I love having a colorful breakfast because it makes me happy straight away and beet is the best ingredient to turn everything into a bright pink! Don’t worry, most times you can’t even taste the beet because the other ingredients are overpowering. Here is an easy recipe for a pink chia pudding.
For the pink chia pudding mix 150ml almond milk with a handful frozen raspberries and 1/2 small raw beet in a blender. Pour into a jar, stir in 3 tbsp of chia seeds and leave in the fridge over night. I topped it with coconut yoghurt, mixed seeds, banana and blackberries.
