Neapolitan Ice Cream evokes childhood memories and when my Grandma turned 92 last week, I had to think of this little treat and I wanted to recreate it as a smoothie. Whereas my other grandma was a queen of the kitchen and cooked and baked the most amazing things, my Oma which I connect the Neapolitan Ice cream with was more an easy going, ready-made meals kind of cook. Before you could even buy proper cappuccinos in cafés she would buy the far too sweet cappuccino powders and we would have some prepared with water. And although I probably couldn’t drink that anymore today I don’t want to miss any of these memories and if it’s not in the kitchen, my grandma taught me in so many other areas!
For the bottom layer, mix one handful fresh or frozen strawberries with 2 tablespoons almond yoghurt and fill into a glass. For the middle layer, stir 1 teaspoon vanilla extract into 2 tablespoons almond yoghurt and pour into the glass. The chocolate layer is made with 1/2 banana, 2 tablespoons almond yoghurt, 1 teaspoon cacao powder and 1 teaspoon oats, all mixed in a food blender.
