Christmas hit me a bit unexpected this year, neither my flat shows any signs of Christmas decoration, nor I’ve eaten any Christmas cookies yet. And let’s don’t speak about Christmas presents please! Anyway, starting slowly now and mulled wine is always a good idea! This recipe is inspired by Jeanny from zuckerzimtundliebe.de and I just made my version vegan and added rhubarb. Ingredients
- 1 big cooking apple
- 250g rhubarb (I bought frozen one), otherwise, just use apples or pears
- 2 tbsp brown sugar
- 1 tbsp lemon juice
- 1 tsp cinnamon
- 150ml mulled wine
For the crumble
- 75g oats
- 50g flour (I used spelt flour)
- 40g sugar
- pinch of salt
- 1 tsp cinnamon
- 75g vegan margarine
Method
Preheat the oven to 200 °C.
Peel the apple and slice into chunks. Mix with the rhubarb, sugar, cinnamon and lemon juice in a big bowl. On low heat, reduce the mulled wine a bit.
In another bowl, mix all ingredients for the crumble. Place the apple rhubarb mix into a baking dish, pour over the mulled wine and sprinkle with the crumbles. Bake for 30 min and serve warm. Add icing sugar or vanilla ice cream if you like.
