Pancakes are just the best start to any day. This is a vegan and gluten-free recipe, actually was the first time I’ve used rice flour! There is white and brown rice flour, I’ve used the white one but should work fine with the brown one as well. Don’t let out the apple sauce as its key to the recipe. I’ve served mine with peanut butter and some crunchy granola.
Recipe
1 cup rice flour
1/4 cup oat flour (just blend oats finely)
2 tsp baking powder
1/2 tsp baking soda
Pinch of salt
2 tbsp cacao powder
2 tbsp sugar
1 cup plant based milk
1/4 cup apple sauce
2 tbsp vegan butter
Mix all together, if the batter is too thick add a bit of more milk. Bake with coconut oil for 3-4 min on each side.
