Bircher Müsli with Cranberries

If I would have to decide on one breakfast to eat for the rest of my life, it would be Bircher Müsli. I pretty much have it every day, most times in slightly different variations but this is my go to recipe. I most times do intermittent fasting during the week, so would have a super late breakfast and in my experience having something ‘ready to eat’ is the easiest way to incorporate intermittent fasting into a work day. Just take it to work with you in a glass jar.

My basic recipe for a big batch

Mix 3 cups oats with 1/4 cup chia seeds, 1/4 cup flax seeds, 1/2 cup cranberries (use any other dried fruit if you don’t like cranberries), 1/2 cup shredded coconut and each 1/4 cup chopped walnuts and sliced almonds.

For one portion combine 1/2 cup of the Bircher mixture with 1/2 cup plant based milk and keep in the fridge over night. Add 1/2 grated apple and 2 tbsp plant based yoghurt the next morning and stir well. Serve with berries.
