Crunch Pancakes with Quinoa

These mini pancakes are made in less than 10 minutes and super fluffy thanks to the popped quinoa! They give a lot of power for the day and I enjoy them the most with fresh fruits and agave syrup.

Ingredients:

  • 60 g whole grain flour
  • 140 ml soy milk or any other plant milk
  • 10 g agave syrup
  • 1 tsp baking powder
  • 1 pinch of salt
  • 1/2 tsp vanilla seeds
  • 30 g popped quinoa

Method:

Mix all ingredients and add the popped quinoa last. Bake with coconut oil on medium heat for 2 minutes on each side.
