Vegan Avocado Chocolate Muffins

I’m a huge fan of Avocado and Chocolate. Having both in one Muffin is the best I can imagine. It’s light, it’s moist, it’s yummy – the perfect summer treat!

Ingredients (for 12 muffins)

  • 1 ripe Avocado
  • 100 ml Agave syrup
  • 50 ml coconut oil
  • 100 ml almond milk
  • 6 tbsp apple sauce
  • 200 g plain flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 50 g raw cocoa powder
  • dark chocolate, cocoa nibs and pistacchios for topping

 

Instructions

  1. Preheat the oven to 180 ° and prepare muffin forms.
  2. Mash the avocado and mix in a food blender with syrup, oil, almond milk and apple sauce.
  3. In a bowl, mix the flour with baking powder and soda and cocoa powder. Whisk the avocao mixture with the flour mixture and fill into muffin forms. Bake for 15 – 20 minutes, let the muffins cool down and top with melted chocolate, cocoa nibs and pistacchios.
