Sweet Beet Chia Pudding

Let me introduce: your new favorite breakfast! Pretty in pink to cheer up your morning and full of goodness. Beet root can sound bit scary, but mixed with apple and banana it turns out to have a beautiful taste. Give it a try! Love, Sarah x

For two servings

  • 250ml almond milk
  • 5 tbsp chia seeds
  • one small beetroot (either baked at 220°C for 45 min, peeled and cooled down or use the pre-cooked option)
  • 1 banana
  • 1 apple
  • 1 tsp cashew butter
  • fresh fruit for topping

Start to prepare the chia pudding and mix the almond milk and chia seeds. Leave in the fridge overnight. If you have to bake the beetroot, best to do it the night before as well. Saves you lot of time next day 😉 In the morning, pour the chia pudding into a blender and add all other ingredients. Mix for 20-30 sec, it should be creamy but not too smooth. Serve with fresh fruits, cocos flakes and cacao nibs.
