I tried many vegan recipes for pancakes and have the feeling I finally found my favorite one! Let me share it with you:
Ingredients (makes 4 pancakes)
- 1 cup flour
- 2 tsp baking powder
- pinch of salt
- 1 tbsp sugar
- 1 cup soy milk
- 1 tbsp vinegar
- 2 tbsp coconut oil
- vanilla seeds
- fruits and maple syrup
Mix all together until smooth and bake on medium heat. The vinegar doesn’t smell nice and is a bit irritating, but you won’t taste it later on and have some amazing fluffy pancakes. I had mine with fresh fruits, icing sugar and lots of maple syrup! Enjoy x
