It’s pancake day! Before I lived in London, I haven’t heard of it; neither celebrated shrove Tuesday but it doesn’t take long to convince me that a day where you can eat pancakes all-day long seems like the best day of the year for me. This is a vegan recipe for the American-style of pancakes. Enjoy!
- 350 ml milk (soy, almond or normal milk)
- 4 tsp white vinegar
- 250 g flour
- 4 tbsp sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 4 tbsp margarine
- Whisk the milk with the vinegar and set aside for 5 min.
- Combine all other ingredients and mix with the milk-vinegar mixture until smooth
- In a pan, heat the margarine and spoon in 1-2 tbsp of the batter. Bake from each side until golden brown.
