Vegan Bircher Müsli with Cranberries which is my all-time favorite breakfast 🌿My basic recipe for a big batch 🙌🏻 Mix 3 cups oats with 1/4 cup chia seeds, 1/4 cup flax seeds, 1/2 cup dried cranberries, 1/2 cup shredded coconut and each 1/4 cup chopped walnuts and sliced almonds 💫 For one portion combine 1/2 cup of the Bircher mixture with 1/2 cup plant based milk and keep in the fridge over night. Add 1/2 grated apple and 2 tbsp plant based yoghurt the next morning and stir well. Dark Chocolate Macadamia Cookies 🍪 Anyone in for one? 🙋🏼‍♀️ Find the super easy and quick recipe below 👇🏻 Heading to the coast for a long weekend and looking forward to walks along the beach and dog cuddles 🐶🌊💞 Happy Friday, Sarah x ~ 80g dark chocolate 50g Macadamia nuts 2 tsp orange zest 250g spelt flour 1 tsp baking powder 100g margarine 125g sugar 50ml soy milk Sea salt to sprinkle after baking Preheat oven to 180C/350F. Chop chocolate and nuts into big chunks. Mix all the other ingredients in one bowl until you have a smooth dough. Best with a kitchen machine or by hand. Gently fold in the chocolate and nuts. Dust a working surface, roll the dough and using a round cookie cutter, cut out cookies and transfer them into a baking tray with baking paper. Bake for 15 min and let them cool down. Orange Carrot Cake 💫 My favorite carrot cake turned into a Xmas version 🎄The secret of this cake is to blend the carrots and not grating them 🤓 Aaannd to use freshly squeezed orange juice, find the recipe below! Happy new week 💕 Love, Sarah x ~ Ingredients 400 g flour (I used 300g spelt and 100g whole wheat flour) 2 tbsp baking powder 300 g carrots (peeled) 100 ml orange juice Juice of one lemon 50 ml almond milk mixed with 1/2 tsp apple cider vinegar 120 g light brown sugar 100 ml coconut oil pinch of cinnamon For the frosting 100 g icing sugar 100 g vegan cream cheese Method: Preheat oven to 180C/375F and prepare a loaf tin. In a food blender mix the carrots with the orange and lemon juice. Add the oil and mix well, add the almond milk mixed with apple vinegar. In another bowl mix all the other ingredients and combine with the carrot-mixture. The dough will be quite firm. Bake for 45 min. Let it cool down and prepare the frosting by mixing the icing sugar with the cream cheese and spread it over the cake. Cinnamon Pull Apart Bread with Orange Icing 💕One of my favorite recipes from my book 📖 Sharing the recipe below 👇🏻 Happy Friday and Happy Nikolaus Day for everyone celebrating 🎅🏼🎄 Love, Sarah x ~ Recipe 500g flour 1 tsp salt 75g vegan butter 300ml soy milk 1 tsp sugar 30g fresh yeast Filling 100g sugar 1 tsp cinnamon 2 tbsp orange zest 2 tbsp olive oil Icing 100g icing sugar 40ml freshly squeezed orange juice 1 tbsp orange zest Mix the lukewarm milk with yeast and sugar and stir until the yeast dissolved. Mix the flour with the salt and vegan butter, add to the yeast-milk mixture and knead for 6 minutes. Works best with a kitchen machine. Cover the bowl and set aside for 30min at a warm place. Mix the sugar, cinnamon and orange zests. Sprinkle a working surface with some flour and roll the dough into a square shape. Brush with olive oil and spread the filling. Cut into 5 lengthwise parts, place them on top of each other, cut this into 4-5 pieces and place them into a greased loaf tin. Cover and let proof for another 20 min. Preheat the oven to 180C and bake the bread for 35 minutes. Let it cool down for 10 minutes, mix all the ingredients for the icing and sprinkle over the warm bread. Chestnut Parfait with Tipsy Cherries 🍒 Do you like chestnuts? I was never a big fan up until last year 🙏🏼 Love their taste and texture! For the parfait mix 100g precooked chestnuts with 4 soft dates, 1/2 tsp gingerbread spice and 3/4 cup plantbased yoghurt. For the cherries use frozen cherries and cook them over medium heat with some red wine and maple syrup. Add a bit of starch to thicken, stir well.
